Coarse Mash of Dried Cod with Chilli-Lime DipType: Entreé
Ingredients
Serves 4 1 kg peeled and diced baking potatoes 6 cloves grated garlic ½ bunch chopped thyme 2 finely chopped shallots 500g diced dried cod or extremely salted cod (steeped for 2 hours) ½ cup good olive oil 4 cups milk (must cover)
Chilli-Lime Dip 1¾ cup mayonnaise 1 tsp mustard 1 zest of lime 1 clove grated, Chinese garlic 1 finely chopped chilli 2 tsp tarragon vinegar A pinch of salt & pepper 1 tbsp chopped dill
PreparationBoil slowly for 30 minutes stirring now and then. Then strain excess liquid (to be saved) and stir into a coarse mash. Adjust to appropriate consistency with the saved liquid. Season with salt, pepper, cayenne and good olive oil. Enjoy with toast.
