Bring cream, milk, vanilla, lemongrass and sugar to the boil and leave to draw for 2-3 hours.
Add egg yolks and stir well. Bake at 120°C under tin foil or lid for 35-40 minutes.
Just before serving, sprinkle with granulated sugar and broil with blowtorch until the sugar is golden brown.
Crumble Knead, crush, crunch well in the hand and crumble onto greaseproof paper. Bake in the oven for 10 minutes at 180°C. Allow to cool and sprinkle before serving.
