Mini omelettes with green asparagus and shrimpsType: Main courses
Ingredients
3 eggs 3 tablespoons milk 3 fresh green asparagus shoots Approx. 100g shrimps Salt and pepper
Preparation
Beat the eggs, milk, salt and pepper together and divide between the 9 hollows in the blini pan. Once they have cooked until sufficiently firm, top with the finely chopped asparagus and shrimps.
Fold the omelettes in half and serve with chutney, e.g. pineapple/chili chutney.
