Orange Braised Carrots "Over the Top"Type: Main courses
Ingredients1 kg peeled carrots cut into appropriate pieces 2 cups orange juice ˝ cup lemon juice 2 cubes chicken stock Pinch of cayenne ˝ tbsp curry powder 5 star anise 1 cinnamon bark 2 tbsp ground cumin 1 whole garlic (cut into halves) 50g grated ginger 2 stalks chopped lemongrass ˝ jar peanut butter 100g butter
Preparation
Place all ingredients into a pot, bring to the boil and simmer for 15 minutes. Leave to draw in the pickle for 24 hours, refrigerated. The pickle can then be frozen and used again later.
